Creamy garlic confit dip with toasted sesame, parmesan and fresh chives

A rich, velvety dip made with slow-roasted garlic confit, toasted sesame seeds, and creamy cheese, finished with fresh chives, lemon, and parmesan for the perfect balance of savoury, tangy, and slightly sweet flavours. The roasted garlic becomes buttery and mellow, blending beautifully into the creamy base, while the sesame adds warmth and subtle nuttiness. Finished with golden garlic cloves, chili flakes, and a drizzle of fragrant garlic–sesame oil, this elegant dip is perfect for sharing with warm bread, crackers, or crisp vegetables.

Ingredients

  • 2 heads garlic cloves, peeled (seems like a lot but roasted tones it down) 
  • 2 tbsp sesame seeds
  • 120 ml (½ cup) olive oil
  • 1 rosemary sprig
  • 200 g (7 oz) cream cheese
  • 1 tbsp mayonnaise
  • 3 tbsp parmesan, finely grated
  • 1 tsp honey
  • ½ lemon, juiced
  • 2 tbsp fresh chives, chopped
  • Salt & pepper
  • Chili flakes (optional)

For garnish:

  • Garlic confit cloves
  • Fresh chives
  • Chili flakes
  • Reserved garlic–sesame oil from roasting

Method

  1. Roast the garlic & sesame →

    Preheat the oven to 180°C. Place the peeled garlic cloves in a small baking dish with the sesame seeds and rosemary sprig. Cover fully with olive oil and roast for 25–30 minutes until the garlic is soft, golden, and fragrant.

  1. Combine the dip →

    Transfer the roasted garlic and sesame seeds to a bowl. Add the cream cheese, mayonnaise, parmesan, honey, lemon juice, chopped chives, salt, chili flakes, and black pepper.

  1. Mash until creamy →

    Use a fork to mash everything together until smooth and creamy, leaving a slightly rustic texture if desired.

  1. Assemble →

    Spoon the dip into a serving bowl. Top with garlic confit cloves, fresh chives, chili flakes, and a drizzle of the reserved garlic–sesame oil.

  1. Serve →

    Serve with warm bread, crackers, toasted pita, or fresh vegetables for dipping.
